fan settings problem

The car in question is 2012 Jeep GC 4x4 overland 5.7 hemi. CALID - 68262766AA, trinity version v.1r13d

I have installed a 180F thermostat and I am working with two reputable custom tuners. They have changed the fan settings but it seems that this is not registered by the car. The fans always come at about 225F (this is with diablo canned tunes, custom tunes, etc. - I believe these are the jeep factory settings).

When I have spoken with both custom tuners they tell me that all settings in their tunes are properly recorded by the car.

While digging into this matter I have seen the following strange things:
In all diablo tunes, custom tunes, etc it shows LS fan on when AC off at 276.79F; 1-2 upshift at 0; see the attached pictures.

Please help.
